White like the marble that cradles its maturation, scented with spices, delicate and sweet on the palate. Once, it was prepared by beating the lard in the white marble mortar of the Canaloni di Colonnata, and used as a basic condiment. Today it is used not only in sautéed base for minestrone, pasta and beans, tomato sauce, seafood first courses and risottos, but also spread on prawns, scampi, swordfish, sea bass and toasted bread, polenta and in cooking fried potatoes and baked. Cold worked. Gluten-free, lactose-free, preservative-free, colouring-free.
