Smell: the lactic acidity of melted butter, animal from clean stables and nutty dried fruit and very aromatic with flowers and herbs is interesting;
Flavour: the primary sensation is medium sweet, then medium-low salty, a slight acidity, the paste is compact, grainy, deformable and slightly sticky.
Food pairings: fantastic cut into cubes for an aperitif, placed in a dish together with cured meats, also perfect for the preparation of dishes given its propensity to melt.
Oenological pairings: structured and aromatic white wine, structured red, but also a bubble is very good.
