At the National Competition “All’ombra della Madonnina”, (the only competition in Italy that rewards cheeses produced exclusively with goat’s milk) in 2016 we achieved the Quality award, in 2017 the Superior Quality award until we reached the plate in 2018 of Excellence.
At the World Cheese Awards the Gold Medal in 2021-2022, the Silver Medal in 2015-2016, in 2019-2020 and the Bronze Medal in 2018-2019.
Gold Medal at the San Lucio Trophy 2016 as the best aged goat cheese.

Ingredients: pasteurized goat’s MILK, lactic ferments, rennet and salt. Surface treated with oil and vinegar.

Smell: a characteristic wild animal even if not too pronounced, lactic of cooked butter and hay vegetable;
Flavour: medium-high sweet, but then the medium salty comes out which becomes spicy with increasing seasoning, it is grainy in the mouth, but overall quite soluble, it has a high persistence. there is a slight acidity which overall makes it pleasant and balanced.

Food pairings: it goes well both in a plate of appetizers with cold cuts and vegetables, or even in a plate of mixed cheeses, when very seasoned, also to be used grated for making risotto or flan with vegetables.

Oenological pairings: full-bodied red wine with good structure.
