It is almost pinkish white: sometimes you may be lucky enough to find the so-called “stripe” of an intense pink color which increases the visual beauty and adds flavor to the taste. The upper part is covered with a good thickness of sea salt, gray-black in appearance due to the spices it is soaked in. The thickness of the piece (from about 0.5 to 1 kg) varies from 4 to 8 cm.
