Flavour: it has an intense, spicy and pungent flavour, which accentuates with ageing, but is very pleasant, balanced and appetizing. A very long persistence.

Food pairings: excellent to be used cut into flakes as an appetizer or as an aperitif, to be sliced ​​to embellish meat carpaccio, to be grated over pasta… its uses are many.
