Smell: the nose has notes of melted butter and vegetables such as toasted dried fruit, and a characteristic animal scent of high intensity;
Flavour: it has an intense, spicy and pungent flavour, which accentuates with ageing, but is very pleasant, balanced and appetizing. A very long persistence.
Food pairings: excellent to be used cut into flakes as an appetizer or as an aperitif, to be sliced to embellish meat carpaccio, to be grated over pasta… its uses are many.
Oenological pairings: it can have a multitude of combinations, from a bubble, a very structured and alcoholic red to a sweet or raisin wine.
